Ingredients
- 3.5 oz Pasta (with leftover sauce)
- 1.8 oz Scamorza (provola)
- Egg (1)
- to taste Breadcrumbs
- to taste Curry (powder)
- to taste Extra virgin olive oil

Preparation
Beat the egg in a dish and then add the leftover pasta with sauce, the scamorza cut into cubes, the breadcrumbs, and season with a generous sprinkle of curry.
Mix all the ingredients and pour into a non-stick pan greased with extra virgin olive oil.
Cook the leftover pasta omelette with curry for three/four minutes. Flip to the other side using the lid and turn off the heat after two/three minutes.
The omelette will appear gratinated and desirable with melted cheese and the special aroma of curry. Additionally, it is a complete dish and a good way to recycle leftovers.
