  • 2 Zucchini (medium)
  • 1 cup cup Chicken breast (sliced)
  • 2 Eggs
  • 1 pinch Garlic
  • 2 Green onions
  • Lemon juice (1 lemon + zest)

Preparation

  • Wash and dry the zucchini well. Cut them in half lengthwise and hollow them out with a teaspoon, removing the central part containing the seeds. Puncture the zucchini with a wooden toothpick to facilitate cooking.

  • Cook the chicken breast slices in the microwave on medium power for 4 minutes, turning after two minutes. Blend the chicken meat in a food processor and prepare the stuffing mixture by combining: chopped parsley, garlic, a little fine salt, breadcrumbs, grated Grana Padano, and beaten egg.

  • Finally, fill the hollowed-out zucchini with the obtained stuffing and place the zucchini in a microwave dish over the squeezed lemon juice and chopped green onions.
