Marinated Anchovies with Orange Juice

The anchovies marinated with orange juice sweetened with juice mixed with vinegar are pleasant. They can also be served with a side of peppers.
The anchovies are small fish about five to six inches in length and are part of the blue fish category caught in the Adriatic Sea. Their taste is unique and particular.
They contain calciumiron, phosphorus and are rich in protein.
They lend themselves to more recipes but, are widely used for preservation in salt and oil.
Having cans or jars of long-lasting anchovies in the pantry is really convenient.
Those preserved with extra virgin olive oil are recommended.
The following recipe is prepared with fresh anchovies purchased from a trusted fishmonger.
 

Marinated Anchovies with Orange Juice

Ingredients

  • 11 oz Anchovies (fresh)
  • as needed vinegar
  • Half teaspoon sugar
  • 2 oranges (medium)
  • 1 clove garlic
  • as needed parsley
  • as needed fine salt

  • Colander

Preparation

  • First, remove the central bone from the anchovies by opening them with your fingers and place them in layers in a container.

  • In a bowl, dissolve the sugar in the juice of the squeezed oranges. Then cover the anchovies with the vinegar and juice and let them marinate for about three hours.

  • Drain the anchovies with a colander and place them on a serving plate atop a bed of oven-grilled peppers seasoned with oil and salt.

  • Finally, add a drizzle of extra virgin olive oil, chopped garlic, and parsley to the marinated anchovies with orange juice and serve with good homemade bread.

  • The sweet and sour recipe of marinated anchovies with orange juice is appetizing and also convenient. Anchovies are found at a good price even in the summer.

The only drawback of the marinated anchovies with orange juice recipe is cleaning the fish, which requires a bit of time and patience. It’s better to equip yourself with gloves. 🙂 and therefore take the necessary time. Consume preferably the same day, and not beyond.
