The oven-grilled bell pepper salad, known in my region of Puglia, is a very popular and practiced recipe. It is used as a side dish and also often to accompany quick dinners, like when eating Pugliese bread with rubbed tomatoes on top. Even “bread and tomato” is a widely spread tradition in Puglia.

Ingredients
- 4 Bell Peppers (Large red and yellow)
- 5 Tomatoes (Not too ripe)
- 1 tbsp Pickled Capers
- to taste Black Olives
- 1 clove Garlic
- to taste Extra Virgin Olive Oil
- to taste Fine Salt
- to taste Oregano
- to taste Parsley (Fresh)

Preparation
Preheat the oven to high temperature and grill the bell peppers for about thirty minutes. Open the oven occasionally and turn them to achieve even cooking.
Let them cool, clean them, and remove the skin and seeds, which come off easily by peeling them with your fingers. Slice the peeled peppers into thin strips.
Then add the peppers to the salad bowl, along with washed and chopped tomatoes, chopped parsley, olives, finely chopped garlic, and then season the salad with oil, salt, oregano, and capers.
Mix well with utensils the delicious oven-grilled bell pepper salad and let it rest for half an hour. Enjoy a Pugliese style dinner by adding some bread and tomato. 🙂 It will be complete.
