Pasta and Green Beans in White Sauce

Pasta and green beans in white sauce is a simple recipe that is part of our southern culture and tradition, from the old times’ humble cuisine when we cultivated the land and patiently awaited the harvest. This simple and genuine dish was cooked in the summer season when tender green beans were abundant. Having had the chance to purchase naturally greenhouse-grown green beans even now that we are in winter (we make do :)), I have brought forward this recipe, which is one of my favorites.

Ingredients

  • 9 oz Pasta (Ditalini shape)
  • 7 oz Green Beans
  • 1 Potato
  • 2 Onions
  • to taste Extra Virgin Olive Oil
  • 6 Cherry Tomatoes
  • to taste Salt

Preparation

  • Trim the green beans by removing the tips, cut them into pieces and wash. Peel the potato, dice it and rinse under running water.        

  • Place the potato pieces in the pot with plenty of cold water on the stovetop and add the pasta and green beans once the water is boiling. Cook for about ten minutes.

  • In the meantime, in a pan with extra virgin olive oil over low heat, brown the sliced onion and simmer the cherry tomatoes.

  • Drain the pasta al dente and finally season each plate with extra virgin olive oil, onion, and cherry tomatoes.

Tips for pasta and green beans in white sauce: The green beans should, however, be fresh for the good outcome of this simple and genuine recipe.

They should be consumed within three days of purchase, and their skin must be smooth. It’s a practical recipe that can also be eaten cold.

It can be prepared in advance, taking care with the pasta’s cooking time (five minutes from boiling is enough), and can be brought to picnics or the beach. It’s digestible and appetizing when the heat suppresses appetite.
