Pasta with Fresh Fava Beans and Creamy Mint

To fulfill my daughter’s desire, we tried cooking spaghetti with fresh fava beans and creamy mint. A special recipe that is quite easy and quick to prepare. The only effort required is to shell the fava beans one by one, but I assure you it’s worth it. I also recommend you try cooking it, and possibly even the spaghetti. I used square spaghetti that hold up well in cooking. If you prefer, it’s important that they are thick, and Pugliese troccoli are also suitable.

  • 10.5 oz fava beans (fresh)
  • 10.5 oz square spaghetti
  • 5 leaves mint (fresh)
  • 3 tbsps extra virgin olive oil
  • to taste Grana Padano cheese, grated

  • Shell the fresh fava beans and weigh them on the scale until you reach 300 g. This is the only challenging part of this recipe, but it’s worth it.

  • Put two tablespoons of oil in a pan and add the shelled fava beans. Brown them and pour in a glass of water. Salt and cook over moderate heat for about fifteen to twenty minutes.

  • Taste the fava beans to check the cooking and pour them into the food processor. Blend with the fresh mint leaves for two minutes.

  • Meanwhile, put a pot with enough water on the stove to cook the spaghetti. Cook for about twelve minutes from boiling and drain.

  • Mix the pasta with the fava bean cream obtained and finally serve at the table. Eat this fabulous, genuine, and nutritious first course hot.

Prefer larger fresh fava beans (you can tell by the shell), suitable for cooking.

The more tender fava beans, suitable for eating raw as a side dish even with bread, are the smaller ones.
