Preparation
Remove the stem from the friggitelli peppers. Wash the peppers and zucchini and then dry well with paper towels.
In a large pan with extra virgin olive oil, brown the finely chopped garlic and sauté the peppers, zucchini, and diced tomatoes.
Cook on low heat for about fifteen minutes, adding a little water during cooking. Cut the speck into small pieces and add it at the end.
Then, boil the rigatoni in a pot with salted boiling water for about ten minutes. Drain the pasta, add it to the vegetables, and stir-fry.
Finally, serve the pasta with zucchini, peppers, and speck, a special first course with an unforgettable Mediterranean aroma and flavor. In my opinion, the success of this recipe is due to the pleasant contrast of the slightly bitter peppers and the sweetness of the zucchini.
