  • 2 leaves bay leaf

Preparation

  • Prepare the sausage sauce by first browning the onion in oil and then adding the crumbled sausage.

  • Then pour in some red wine, let it evaporate and add the tomato sauce, parsley, and a little salt.

  • Cook the broth over moderate heat for about thirty to forty minutes.

  • Prepare the vegetable broth by adding raw vegetables like celery, carrot, potato, onion, tomatoes into the salted cold water.

  • Meanwhile, place the pumpkin flesh without the rind in a pan with oil, onion, bay leaf, add salt and cook over low heat with the lid on for about twelve minutes.

  • Check that it does not stick and, if it does, add a little vegetable broth. Blend the cooked pumpkin to obtain a cream.

  • Cook for about forty minutes over low heat.

  • Sprinkle the semolina into the vegetable broth (about 1 quart for four people) and stir often with a wooden spoon to prevent sticking.

  • Cook for about twenty minutes over low heat and finally mix with the pumpkin cream and blend homogenously.
