Potato Gnocchi with Sun-Dried Tomatoes and Cheese

I quickly prepared these gnocchi with the sun-dried tomatoes and cheese I had available at home. I really enjoyed them, perhaps because the salted sun-dried tomatoes are tempting and the cheese made them creamy.

This first course is one I’ll keep in mind for the times I need to cook quickly, and I’m sure my daughters will like it too.

Ingredients

  • 1.1 lbs potato gnocchi
  • 3.5 oz sun-dried tomatoes
  • 5.3 oz cheese (spicy caciotta or other)

Steps

  • Put water to boil in a pot on the stove and when it reaches a boil, add the gnocchi.

  • After about two minutes, they will come to the surface, and you can then drain the gnocchi in the colander.

  • Return to the pot with cheese and sun-dried tomatoes cut into small pieces, and stir until the cheese melts.

  • Serve hot and steaming this easy, quick, and delicious first course.

The spicy caciotta can be replaced with the mild version, or any other cheese of your choice. If you like, you can serve with a pat of butter on each plate.
