Ingredients

  • 2 quinces
  • water (plenty)
  • sugar
  • to taste lemon juice
  • to taste ground cinnamon

Steps

  • Cut the quinces into pieces, remove the peel and the central core. Using a cutting board and a suitable knife will make it easier.

  • Wash the fruit in a bowl and place it in a pot with plenty of cold water to cover the quinces.

  • Add sugar to taste. I would recommend at least a heaping tablespoon because, as you well know, they are a tart fruit.

  • Cook on the stove over moderate heat, counting about twenty minutes from boiling. Insert a fork to check the cooking; otherwise, extend for another five minutes.

  • At this point, serve the quinces with the sweet syrup in large cups and season with lemon juice and ground cinnamon.
