  • 2 carrots
  • 1 onion

Steps

  • Check the lentils to remove any possible debris or small stones. Wash under running water after placing them in the colander.

  • Fill the pressure cooker with enough water to cover the lentils.

  • Add the vegetables: onion, cherry tomatoes, celery, and carrots. Salt and add the vegetable broth powder and extra virgin olive oil.

  • Close the pressure cooker, turn on the heat, and wait for it to reach maximum steam. Count 25 minutes of cooking.

  • Open the pressure cooker with due care (follow the instructions in the manual), taste, and if you want them a little more cooked, continue for another 6/7 minutes without closing with the lid.

  • Serve the hot steaming red lentil soup cooked in a pressure cooker, adding a drizzle of raw extra virgin olive oil to each plate.
