Ingredients
- 1 1/2 cups Rice
- 5 1/4 oz Asiago Cheese
- 3 1/2 oz Cooked Ham (Single slice)
- as needed Grana Padano (Grated)
- 2 Eggs
- 1 clove Garlic
- as needed Parsley
- as needed Breadcrumbs
- as needed Butter

Preparation
Boil the rice until al dente in a pot with salted water for the time indicated on the package, usually 13/15 minutes from boiling. Drain and rinse under cold water to stop cooking.
In a bowl, mix the rice with diced Asiago cheese and ham, some grated Grana Padano, the beaten eggs, and finely chopped garlic and parsley.
Butter a muffin pan and sprinkle with breadcrumbs. Fill each cup with the rice mixture.
Flatten with the bottom of a glass and sprinkle more breadcrumbs and a small piece of butter on each casserole. Bake in a preheated fan oven at 536°F for about fifteen minutes.
Finally, serve the ‘Rice Muffin Casseroles’ hot, possibly with boiled and dressed vegetables like garlic, oil, and vinegar, such as chicory, escarole, or preferred options, two on each plate, with more surely requested for seconds :).
