The “Rice Muffin Flans” is a recipe devised to use up leftover rice in a tasty way, but I won’t wait for leftovers to make them again. The magic of the oven, with the good ingredients usually found in homes, therefore transformed the leftover rice into a good complete first course, accompanied by boiled vegetables. This recipe can also use leftover rice with sauce. Plain rice, however, is perfect. Even overcooked rice used in this way does not turn out unpleasant to the palate. It’s hard to tell as the ingredients blend well to become a whole, much like a savory muffin. They are tasty and appealing to eat preferably hot when they emit a delicious aroma.

Ingredients
- 1 1/2 cups Rice
- 5 1/4 oz Asiago
- 3 1/2 oz Cooked Ham (Single slice)
- to taste Grana Padano (Grated)
- 2 Eggs
- 1 clove Garlic
- to taste Parsley
- to taste Breadcrumbs
- to taste Butter

Preparation
Boil the rice al dente in a pot with salted water for the time indicated on the package, generally 13/15 minutes from boiling. Drain and rinse under cold water to stop the cooking.
In a bowl, mix the rice with diced Asiago cheese, cubed ham, a bit of grated Grana cheese, beaten eggs, finely chopped garlic, and parsley.
Butter a muffin tin and sprinkle with breadcrumbs. Fill each container with rice.
Flatten with the bottom of a glass and sprinkle each flan with more breadcrumbs and a small piece of butter. Bake in a fan-heated oven preheated to 536°F for about fifteen minutes.
Finally, serve the “Rice Muffin Flans” hot, possibly with boiled vegetables seasoned with garlic, oil, and vinegar, such as chicory, escarole, or any preferred choice, two on each plate, as the others will surely be requested for seconds :).
