This round soft cheese with celery and lemon is truly irresistible and different from the usual.
It is quick to prepare and pairs well with boiled chicory seasoned with oil and garlic.
A recipe I thought of to use the soft cheese that I unfortunately sometimes forget in the fridge and it often goes bad. So I thought of using it this way to finish it all at once.
I must say that I, who love cheeses and even raw vegetables, liked it a lot.

Ingredients

  • 7 oz table soft cheese (Like Philadelphia;)
  • 5.3 oz celery (stalk part)
  • 1/2 teaspoon lemon juice
  • 4 slices lemon
  • 1 teaspoon extra virgin olive oil
  • 1 clove garlic

Steps

  • Wash the pieces of fresh celery stalk, dry them and chop them in the food processor.
    In a bowl, mix with a spoon the cheese with the chopped celery, the peeled and finely chopped garlic, the lemon juice, and the oil.
    Wet your hands and form four round mozzarella cheeses.
    Add to the recipe some chopped parsley and ground black pepper if preferred.
    Present the dish at the table accompanied by a side of boiled chicory in boiling water for about ten minutes and simply seasoned with oil, garlic, and salt, or also with fresh lettuce salad dressed.
