- 7 oz table soft cheese (Such as Philadelphia;)
- 5.3 oz celery (stalk part)
- 1/2 teaspoon lemon juice
- 4 slices lemon
- 1 teaspoon extra virgin olive oil
- 1 clove garlic

Steps
Wash the pieces of fresh celery stalks, dry them, and chop them in the food processor.
In a bowl, mix the cheese with the chopped celery, peeled and finely chopped garlic, lemon juice, and oil with a spoon.
Wet your hands and form four round cheese balls.
Add chopped parsley and ground black pepper to the recipe if desired.
Present the dish at the table accompanied by a side of boiled chicory in boiling water for about ten minutes and simply seasoned with oil, garlic, and salt, or even with fresh lettuce salad dressed.
