Rustic Tomato and Mozzarella Closed in Envelope Shape

The rustic tomato and mozzarella is made with ready puff pastry shaped like an envelope, with a seal.
A system I learned from my daughter that I find quite practical and that encloses all the filling well. I like to change and when I set out to prepare the rustic dishes, I spend some time searching Google for possible variations. This rustic with tomato and seal seemed like a different idea to try.
Surely my daughter also helped me prepare it.
Finally, working together, we also had fun.

Rustic Tomato and Mozzarella

Ingredients

  • 4.6 oz puff pastry (1 round package)
  • 3 mozzarella (medium)
  • 10.6 oz tomatoes
  • 5.3 oz turkey breast (sliced)
  • as needed breadcrumbs
  • egg (1)
  • 2 leaves basil (fresh)

Tools

  • Rolling Pin
  • Pie Pan

Preparation

  • Roll out the puff pastry with the rolling pin to thin it, but not too much.

  • Prick the puff pastry with a fork and sprinkle some breadcrumbs on top.

  • Blanch the tomatoes in a pot with hot water, peel them and blend them.

  • Then place in the center of the pastry a base of sliced turkey and add the blended tomato, cubed mozzarella and chopped basil.

  • To make the envelope shape, simply open a paper envelope and close the pastry in the same way, enclosing the filling.

  • Bake in the oven for 25 minutes at 482°F. Let it cool a bit and finally enjoy the rustic tomato and mozzarella, scented with basil with melted mozzarella and fresh tomato, tasting similar to the famous panzerotto.

Bread crumbs help to absorb the liquids. This way the rustic cooks better and stays dry and crispy. You can also replace the filling with other ingredients you might like more. Or in the sweet version sealed perhaps with a cherry. Any change is certainly allowed in the kitchen to enjoy and discover new recipes to then share with friends for an exchange of ideas on the different ways of doing. Every experience is useful and teaches for oneself and others. Even making mistakes, after all, one learns. Despite good intentions, it can sometimes happen. Although almost always one can repair.
