Sandwiches with Grilled Zucchini

The rolled sandwiches with grilled zucchini are a fresh and tantalizing appetizer especially suited for the hot summer. They can also be prepared for occasions like parties and to add to the buffet table. Grilling zucchini is the one thing you wouldn’t want to do in summer, but with a bit of will, anything is possible.   Personally, I took advantage of the moment when my husband willingly offered to grill the zucchini on the grill, to also make this appetizer of “Sandwiches with Grilled Zucchini” in roll form. Sandwiches with Grilled Zucchini

Ingredients

  • 2 Zucchini
  • 2 Sandwich Bread
  • to taste Soft Spreadable Cheese
  • 1 glass Milk
  • to taste Olives
  • to taste Fine Salt
  • Extra Virgin Olive Oil
  • to taste Oregano

Preparation

  • Slice the zucchini into long, thin slices and grill in a pan for about five/six minutes, turning them on both sides.

  • Moisten the slices of sandwich bread with a few tablespoons of milk. They shouldn’t be too wet. Spread the soft cheese on the slices, and sprinkle with oregano.

  • Then lay the grilled zucchini on top lengthwise, season with salt, and drizzle with a bit of oil. Add green or black olives, chopped.

  • Roll the slices lengthwise, being careful to keep the filling inside. Lightly press with your hands to bind the ingredients.

  • Cut into small rolls about 1.18 inches each. Arrange the “Sandwiches with Grilled Zucchini” appetizer on a serving dish, adding more olives and zucchini for decoration.

  • Place in the refrigerator for half an hour before eating the appetizer. This is a very simple and hopefully appreciated recipe.
