Preparation
Beat the eggs with the sugar until frothy with a spoon or a whisk, add the extra virgin olive oil and mix.
In a bowl, sift the flour and add the baking powder, vanillin, and a pinch of salt.
Pour the frothy eggs into the bowl and then mix with the oil and plain yogurt. Mix well, ensuring there are no lumps.
Pour the mixture into the cheerful paper liners suitable for muffins and place them in the slots (my cake pan is designed however to bake twelve muffins) presented by the special baking tray.
Then bake for about twelve to eighteen minutes and no more in the oven preheated to 392 degrees Fahrenheit. Sprinkle with powdered sugar when they have cooled and serve for breakfast or a snack that will please both kids and adults.
Check the cooking through the oven glass but avoid opening it otherwise they will deflate.
Let them cool before offering them, even if the temptation is to eat them immediately.
