Soft and Tasty Coffee Cake with Chocolate Chips

I tried this soft coffee cake with chocolate chips, which is not entirely new to me since I already knew the coffee cake. The ring shape is what I like so much, maybe because it reminds me of an American breakfast and somewhat also the way it is prepared. It stays moist and soft when kept in a dry place and covered with a kitchen towel. However, I doubt the cake will last more than three days. A recipe to discover with ingredients we usually have at home. The chocolate chips are the enrichment of this special dessert.

Ingredients

  • 3 1/4 cups all-purpose flour
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 packet baking powder
  • 3 coffee cups
  • 1/2 cup milk
  • 5 oz butter
  • to taste powdered sugar (Optional)

Steps

  • In a large bowl, beat the eggs with electric beaters for two to three minutes.

  • Incorporate the melted butter in a double boiler, milk, and coffee, always mixing with the beaters.

  • Add the sugar and work until you obtain a frothy mixture.

  • Finally, pour the sifted flour with the baking powder packet little by little into the bowl, working with the beaters until the mixture is smooth and lump-free.

  • Finally, add the chocolate chips and mix with a spatula. Pour into a greased and floured bundt pan or cake tin.

  • Bake in the preheated electric oven at 340°F and cook in a ventilated oven for about 45 minutes. Perform the toothpick test, which involves inserting the toothpick in a part of the cake, and if it comes out dry when withdrawn, it means the cake is well cooked.

  • Serve the cake after letting it cool, and if you want, sprinkle a little powdered sugar on top, otherwise it’s already perfect as it is, I assure you.

Use decaffeinated coffee if preferred for your children. Preferably use a convection oven that helps the cake rise, making it taller and softer. Otherwise, increase the static oven temperature to 355°F.
