Soft Homemade Potato Bread

Ingredients

  • 4 cups Re-milled Durum Wheat Semolina (For pasta and bread)
  • 2 Potatoes (medium)
  • 1 teaspoon Fine salt
  • 1.5 cups Water
  • 0.4 oz Fresh Brewer's Yeast

  • Container Tupperware for pizza
  • Work surface

Preparation

  • Boil the potatoes in a pot with water until the fork pierces them, about seventeen/twenty minutes.

  • Then mash them on a plate using a fork.

  • Pour the flour on the work surface and add salt.

  • Shape into a well and add the mashed potatoes into the center.

  • Gradually pour in the warm water in which the brewer’s yeast has been dissolved and knead by hand.

  • Knead for about fifteen minutes. Place the dough inside the Tupperware container for pizza and let rise for at least two hours.

  • Divide the dough into two parts. Then shape into loaves by stretching the dough and make cuts on top.

  • Let rise again for about thirty minutes and finally bake in a preheated oven at 482°F for about thirty minutes.

  • Let the bread cool before slicing. Soft homemade potato bread is also great for breakfast with jam and Nutella.
