Spaghetti with tuna and pepper sauce is a recipe I invented, but… perhaps for some, it may not be new.
A very tantalizing first course with raw friggitelli pepper rings.
The “friggitelli” are much appreciated in southern Italy during the summer and are mostly prepared fried (hence their name friggitelli) and also boiled with vinegar for summer salads.
In my recipe, I tried them raw, and for me, it was a successful experiment.

Ingredients
- 12 oz spaghetti (I recommend restaurant-style spaghetti)
- 2 cups tomato sauce
- 6 oz tuna in oil (equivalent to one can)
- 5 friggitelli (small typical Puglian peppers)
- 1 tbsp capers
- 1/2 onion
- to taste parsley (fresh)
- to taste salt
- 3 tbsps extra virgin olive oil

In a pot with extra virgin olive oil, sauté the tuna along with the onion. Add the sauce after a few minutes with the capers (one teaspoon), chopped parsley, a little salt, and a tablespoon of vinegar.
Close the pot with the lid and cook for about thirty minutes over low heat.
Check if you need to add water and stir occasionally.
Wash the peppers, dry them, and cut into rings.
Cook the spaghetti al dente in another pot with boiling water for about eight minutes.
Drain and toss with a ladle of sauce to prevent them from sticking.
Serve on plates, adding more tuna sauce and finally the friggitelli pepper rings.
