First, prepare a good vegetable broth with water and vegetables (celery, carrot, onion, and potato) cooked in a small pot for thirty minutes.
Then put three tablespoons of oil in the pressure cooker with a knob of butter and the finely chopped onion.
Brown and then add the chicken cut into small cubes.
Leave for a few minutes and add rice and white wine. Stir to evaporate and finally pour in the prepared half a quart of vegetable broth.
Close the pot and count eight minutes of cooking from when it reaches maximum steam and the flame is lowered (follow the cooking instructions for the pot used).
