Spicy and Crispy Air Fryer Zucchini Peels

For this recipe, use zucchini peels that are sometimes thrown in the trash. Don’t do it anymore; you can make chips to serve at the table as a side dish. They are a delight and can be made quickly without much effort. You can also modify the spices to your liking and choose your favorites. Ingredients

  • 1 zucchini (The zucchini should be large)
  • to taste extra virgin olive oil
  • to taste oregano
  • to taste rosemary
  • to taste sweet paprika
  • to taste fine salt
  • 1 tbsp Grana Padano DOP (grated)
  • 1 tbsp breadcrumbs

  • Potato Peeler

  • Air Fryer

Steps

  • Wash the zucchini and dry it with a towel. Choose a fresh one with an intact skin.

  • Peel the zucchini with the potato peeler and place the green peels in a bowl. Save the pulp for other recipes, perhaps for a zucchini cream.

  • Add extra virgin olive oil and spices, oregano, rosemary, paprika, and fine salt to the bowl and mix.

  • Add the cheese and breadcrumbs, then toss the zucchini peels with a fork so they can be coated with the cheese and breadcrumbs.

  • Place the zucchini peels directly on the basket of the air fryer, even without parchment paper (if there are too many, do it in two batches) and cook for ten minutes.

  • Open the fryer, flip the zucchini peels to the other side, and continue cooking for another five minutes.

  • Serve the spicy and crispy air-fried zucchini peels hot as a side dish. What a treat to try, I recommend it.
