Sweet and Sour Cabbage and Peppers

Preparation

  • Prepare the vegetables. Wash the pepper, dry it, and remove the seeds inside. Wash the cabbage under running water and let it drain in a colander.

  • In a saucepan with extra virgin olive oil, sauté the finely chopped onion with the diced red pepper and the cabbage cut into thin strips.

  • Let it wilt for about 7-8 minutes over moderate heat with the lid on.

  • Add a sprinkle of ground black pepper, a little fine salt, sugar, and vinegar and stir. Cook for another 2-3 minutes.
