With ground veal, it is more nutritious and varies according to the vegetables we include and the quantity of vegetables. To be honest, there are vegetables with a stronger taste like peppers and cabbage, which are better not to overdo. A good minestrone must be as rich in vegetables as possible.

Ingredients
- Zucchini (1)
- Potatoes (1)
- Onions (1)
- as needed Celery
- Bell peppers (1 Red or Yellow Bell Pepper)
- Eggplant (Half an Eggplant)
- 2 Carrots
- 7 oz Beans (Pre-cooked)
- 7 oz Meat (Ground Veal)

- 5 oz Pasta (Small Shape)

Preparation
In a large bowl, wash and then chop the various vegetables into pieces.
Sauté the onion in a large pot with extra virgin olive oil and then add the ground veal. Brown for a few minutes.
Add all the other vegetables and pour two glasses of water into the pot.
Cook for about twenty minutes from when it starts to boil.
Check occasionally if more water needs to be added.
Cook the pasta separately and finally after draining it, mix it with the delicious minestrone with ground veal and serve hot on plates.

Vegetable minestrone with ground veal is a good idea to use up vegetables.
If you prefer dry beans, which take longer to cook, they should be cooked separately and then added.
It is advisable, however, to check during cooking to add more water if necessary. It can also be enjoyed with pasta or rice.
To not miss out on minestrone even when I’m missing vegetables, I add those I have available at home to the frozen minestrone I keep in the freezer.
Minestrone is certainly very good for you and it is advisable to include it in the weekly menu.
Rather than the usual soup, I would recommend trying it this way.
