- Wafers (1 package)
- 1.1 lbs Almonds (Shelled)
- 1.5 cups Honey
- 2 tbsps Sugar

Preparation
Place about half a pound of almonds in a non-stick pan over medium heat and toast them slightly, making sure to stir them often.
Melt 1.5 cups of honey with two tablespoons of sugar in another pan, heating over the fire until caramelized. Arrange the wafers on the work surface (preferably marble).
Put the toasted almonds into the caramel and gently stir them to coat evenly.
Place the pan near the work surface and, using two forks, take a few almonds at a time. Let them drain a little and then place them on other wafers. Keep the almonds somewhat spaced apart.
As you finish stuffing the wafers with caramelized almonds, place additional wafers on top to close.
Once completed, let the filled wafers with almonds cool, placing weights on top of the prepared wafers to press them (using a cutting board, rolling pins, and heavy books placed on paper bags).
Wafers Filled with Crunchy Honey Almonds
The preparation of these wafers filled with almond energetic sweets requires time (about one and a half hours), skill, and caution in arranging the almonds. Preferably not too close to avoid caramel build-up, which could create some chewing difficulty. The indicated doses are sufficient for at least ten people, and I hope you can come and taste them in our beautiful village one day.
