I must admit that I was skeptical about this water cake with cocoa and brown sugar but I changed my mind. I don’t trust cakes without butter, milk, eggs, etc… I always thought: what kind of cake could that be?!? In this cake, there isn’t even any baking powder. Since my sister-in-law offered it to me (she is very health-conscious and has adopted organic cooking), I found it not so bad, actually… I got the recipe for this water cake and now I prefer it. I can feel the difference, and I find it doesn’t weigh me down at all.

Ingredients
- 3 1/3 cups Flour
- 7/8 cup Brown Sugar
- 3/4 cup Unsweetened Cocoa Powder
- 1 teaspoon Ground Cinnamon
- 1 packet Vanillin
- 1 pinch Fine Salt
- 1 teaspoon Baking Soda
- 1 teaspoon White Wine Vinegar (Or red)
- 1 1/4 cups Water
- 2/3 cup Olive Oil

Preparation
In a large container, pour the dry ingredients: flour, sugar, cocoa, cinnamon, vanilla, salt, baking soda, and grated lemon peel.
Warm the water slightly and pour it into the container. Add the oil and vinegar, which helps enhance the effect of the baking soda that helps the cake rise even without baking powder.
Mix well with the electric whisk or with a spoon for about five minutes.
Pour the mixture into a baking pan lined with parchment paper and bake in a preheated oven set at 355°F for about thirty to forty minutes.
After thirty minutes, check if the water cake with cocoa and brown sugar is ready with a wooden skewer. If it comes out dry after inserting it, the cake is definitely well cooked.

The vinegar that serves to enhance the effectiveness of the baking soda is not noticeable; however, for those who are more sensitive to it, it can be eliminated.
Finally, add powdered sugar if desired.
