Yellow Milanese Risotto without Ossobuco with Saffron

The risotto alla milanese yellow is inviting, flavorful, and delicate, with “saffron” as its main ingredient. It’s a well-loved first course that also appeals to children, who are drawn to its beautiful yellow color. A preface: This recipe corresponds to the one found on saffron packets to which they have given the following title, with some modifications. The true authentic Milanese risotto is instead cooked with ossobuco which has nothing to do with this recipe, and there is no comparison. I hope the Milanese are not shocked; I repeat, it is the recipe I found recommended on the package. Anyway, I find this risotto a good solution for when you don’t have much time and cannot go grocery shopping to buy meat. A healthy, light, and tasty recipe.

Personal suggestion: Use vegetable broth instead of meat broth, made with vegetables: carrot, celery, onion, potato, and water. The risotto will have an even more delicate taste and will still be even more digestible.

Finally, the quality of the rice is important; choose rice that holds up well to cooking and does not become overcooked.
