Preparing the breadcrumbs: Let’s start by creating a fragrant breadcrumb: place the pieces of bread on a baking sheet and bake at 356°F until toasted on both sides. Then let it cool slightly and blend the stale bread in a mixer with garlic, parsley, and a pinch of salt until you get a homogeneous mixture. You can customize it by adding your favorite aromatic herbs for a unique touch. If you don’t have stale bread, you can use ready-made breadcrumbs.
Clean the artichokes, trim the plant and remove the tougher outer leaves. Slice and remove any internal “choke.”
Immerse the artichokes in lemon acidulated water to prevent them from browning.
We use three plates: one with the breadcrumbs, one with flour, and another with two beaten eggs. Drain and dry the artichokes well and pass them first in the flour, then in the beaten eggs, and finally in the prepared breadcrumbs, pressing lightly to make it adhere well.
Place the artichokes in the air fryer basket, avoiding overlapping.
Cook at 320°F for 25 minutes, turning them halfway through cooking to ensure even browning.

We can store the breaded artichokes in the refrigerator, in an airtight container, for up to 2 days. To reheat them, use the air fryer at 320°F for 5 minutes.
