CHOCOLATE AND COFFEE PANETTONE CAKE ALSO FOR BIMBY is a delicious combination of coffee and chocolate that is very easy to prepare and will win everyone over at the first bite. Soft and spongy, even my son liked it. A simple dough to prepare but baked in a panettone mold. You’ll see how pretty it comes out.

Ingredients
- 8.5 tbsp butter
- 0.6 cup sugar
- 3 eggs
- 0.6 cup milk
- 2 tbsp coffee
- 2.5 cup all-purpose flour
- 4 tbsp unsweetened cocoa powder
- 1 tbsp baking powder
- 1 pinch salt
- 3.5 oz white chocolate
- 1.75 oz 55% dark chocolate (in shavings)
Steps
First, preheat the oven to 356°F and then start with the recipe.
Using a stand mixer or electric beaters, cream the sugar and butter together into a soft, creamy mixture. Then add the eggs one at a time.
Add the milk, room temperature coffee, and finally the flour, cocoa, baking powder, and a pinch of salt.
Continue mixing until the batter is smooth and lump-free.
Place everything in a 500g panettone mold.Bake immediately in a preheated oven for 40/45 minutes. Always check by doing the toothpick test before taking it out of the oven.
Meanwhile, chop the white chocolate and melt it in a double boiler or microwave.
Remove the cake from the oven and let it cool slightly before removing it from the mold.Cover with the melted white chocolate and serve in slices as you like our CHOCOLATE AND COFFEE PANETTONE CAKE ALSO FOR BIMBY, topping with dark chocolate granules or shavings.

Place the butter and sugar in the mixing bowl and mix for 1 minute at speed 4.While the blades continue to run at speed 4, add the eggs one by one and start from scratch. Also, add the milk, room temperature coffee, flour, cocoa, baking powder, and a pinch of salt.
Knead for 2 minutes at speed 5. Pour into the panettone mold and bake for 40/45 minutes. Always do the toothpick test after 30 minutes.
Meanwhile, in the clean mixing bowl, melt the white chocolate and chop it for 5 seconds at speed 7. Melt by setting for 6 minutes at 122°F speed 3.
