CHOCOLATE AND COFFEE PANETTONE CAKE ALSO WITH BIMBY is a delicious combination of coffee and chocolate that is very easy to prepare and will win everyone over at first bite. Soft and spongy, even my son liked it. A simple dough to prepare but baked in a panettone mold. You’ll see how cute it turns out.

Ingredients

  • 1/2 cup butter
  • 1/2 cup sugar
  • 3 eggs
  • 2/3 cup milk
  • 2 tbsps coffee
  • 2 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tbsp baking powder
  • 1 pinch salt
  • 3 1/2 oz white chocolate
  • 1 3/4 oz 55% dark chocolate (shaved)

Steps

First, preheat the oven to 350°F and then start with the recipe.

  • With a stand mixer or electric beaters, cream the sugar and butter into a soft paste. Then add the eggs one at a time.

  • Add the milk, coffee at room temperature, finally the flour, cocoa, baking powder, and a pinch of salt.

  • Continue mixing until you get a smooth batter without lumps.
    Put everything in a 1 lb panettone mold.

  • Bake immediately in the preheated oven for 40/45 minutes. Always check with a toothpick before taking it out of the oven.

  • Meanwhile, chop the white chocolate and melt it in a double boiler or microwave.
    Take the cake out of the oven and let it cool slightly before removing it from the mold.

  • Cover with the melted white chocolate and serve our CHOCOLATE AND COFFEE PANETTONE also with BIMBY in slices as desired.

  • Preheat the oven to 350°F and prepare a panettone mold.
    Put the butter and sugar in the bowl and mix for 1 minute at speed 4.

  • While the blades are still spinning at speed 4, add the eggs one by one and start over. Also add the milk, coffee at room temperature, flour, cocoa, baking powder, and a pinch of salt.

  • Knead for 2 minutes at speed 5. Put in the panettone mold and bake for 40/45 minutes. Always do the toothpick test after 30 minutes.

  • Meanwhile, in the clean bowl, melt the white chocolate and chop for 5 seconds at speed 7. Melt by setting for 6 minutes at 122°F speed 3.
