  • 3/4 oz all-purpose flour
  • 1 1/2 oz sugar (30 + 10)
  • 2 eggs
  • 2 tbsps milk
  • 1 1/2 tbsps vegetable oil
  • 1 1/2 tbsps unsweetened cocoa powder
  • 1 tsp rum flavoring
  • 1 tsp baking powder
  • 7 oz mascarpone
  • 4 1/2 oz mascarpone
  • 2 tsps vanilla extract
  • 9 oz 70% dark chocolate
  • 1/2 cup whipping cream

Steps

Let’s discover how to prepare the delicious Christmas Yule Log step by step: from the soft biscuit dough to the delicious filling, to the final decoration. A dessert that will surprise everyone!

  • Prepare the Biscuit Dough:
    Separate the egg whites from the yolks. Whip the egg whites with 30 g of sugar until stiff.
    In another bowl, beat the yolks with the remaining 10 g of sugar until light and fluffy.
    Add the oil, milk, rum flavoring, flour, cocoa, and baking powder to the yolks. Mix until smooth.
    Gently fold in the whipped egg whites, mixing from bottom to top.
    Pour the batter into the air fryer basket lined with parchment paper, cook at 320°F for 15 minutes.
    Prepare the Vanilla Cream:
    Whip the cream in a bowl. When almost whipped, add mascarpone and vanilla extract. Finish whipping until soft cream is obtained.
    Assemble the Yule Log:
    Spread the biscuit dough on a sheet of parchment paper and trim the edges.
    Fill with cream and add chocolate shavings. Roll gently and close like a “candy” with parchment paper. Refrigerate for 30 minutes.
    Decorate the Yule Log:
    Melt the dark chocolate and mix with the whipped cream for the topping.
    Cover the yule log with chocolate cream and decorate with chocolate shavings or powdered sugar.

  • Oven Preparation: Preheat the oven to 356°F (static) or 320°F (fan).
    Pan Preparation: Line a rectangular baking pan with parchment paper, ensuring it is well stretched and covers the edges.
    Pour the Batter: Pour the biscuit dough batter into the pan, leveling it evenly with a spatula.
    Baking: Bake in the oven for about 10-12 minutes, or until the biscuit dough is golden and dry to the touch.
    Baking Check: To check doneness, perform the toothpick test: insert it into the center of the batter, if it comes out dry, it is ready.
    Cooling: Once baked, let the biscuit dough cool on a rack for a few minutes. When it’s still warm, you can trim it and proceed with assembling the yule log.
