Ingredients
Let’s prepare these light and crumbly cookies together with a few simple and genuine ingredients. The rice flour gives a unique texture, while the lemon adds a touch of freshness and aroma.
- 2 1/2 cups rice flour
- 3 1/2 tbsp sunflower seed oil
- 2/3 cup sugar
- 1 egg
- 2 tbsp plant-based milk
- 1 lemon zest (organic)
- 1 teaspoon baking powder (for desserts)
- 1 pinch salt

Now let’s move on to the preparation! Whether you have the Thermomix or prefer to work the dough by hand, you will get soft and fragrant cookies in no time.
With Thermomix
1. Put the sugar and lemon zest in the bowl. Pulverize for 10 seconds at speed 10.
2. Add the sunflower oil and egg, mix for 1 minute at speed 4.
3. Add the rice flour and salt, knead for 30 seconds at speed 4.
4. Add the baking powder and knead for 10 seconds at speed 4.
5. Take small pieces of dough, form balls and place them on a baking tray lined with parchment paper.
6. Bake at 340°F for 8 minutes until lightly golden at the base.
7. Let them cool and serve with powdered sugar if desired.Without Thermomix
1. Grate the lemon zest and mix it with the sugar in a bowl.
2. Add the oil and egg, work with a whisk until you get a homogeneous mixture.
3. Add the rice flour, salt and mix with a spoon or hands until a soft dough is obtained.
4. Incorporate the baking powder and mix well.
5. Form balls and place them on a baking tray with parchment paper.
6. Bake at 340°F for 8 minutes.
7. Let cool and serve.
