It often happens that you open the fridge and find a couple of zucchinis just waiting to be used. Instead of leaving them there sadly, we turn them into grated zucchini fritters! It’s a recipe that feels like home, with hands dirty from the batter and forks stealing hot fritters. And that moment when someone asks: “Is there one left?” is never missing!
The zucchini fritters are also perfect as a main course, especially if you serve them with a nice fresh salad or some light sauces like yogurt or tzatziki. They’re quite filling and satisfying, plus they’re a tasty and different idea from the usual.

Ingredients for Grated Zucchini Fritters
With a few ingredients and quick cooking in hot oil, you bring a crunchy and light treat to the table, perfect for sharing.
- 2 zucchinis (medium)
- 1 1/2 cups all-purpose flour
- 1 tsp instant yeast for savory preparations
- to taste salt
- 1 egg
- 2/3 cup sparkling water (or beer)
Steps
We prepare a simple and light batter, and with quick cooking, we obtain fritters that are crispy on the outside and soft on the inside.
1. First, grate the zucchinis using a large-hole grater and place them in a colander with a pinch of salt, under a weight. Let drain for about 1 hour.
2. Meanwhile, prepare the batter: Sift 1 1/2 cups of flour with 1 tsp of instant yeast into a large bowl.
3. Then add the whole egg and mix with a fork.
4. Gradually pour in the cold sparkling water (you can also use a good light beer for more flavor) and continue mixing until you get a smooth and thick batter.5. Take the grated zucchinis and squeeze them well (with all the day’s frustration!) and add them to the batter.
6. Separately, heat plenty of vegetable oil in a deep-sided pan and drop spoonfuls of the batter, letting them brown well on both sides.
7. Fry our fritters until golden on both sides.
8. Then drain on absorbent paper to soak up excess oil, serve hot!
Try them tonight: all you need are a few ingredients, some wrist action, and the desire to indulge in a comfort dish that everyone agrees on. And trust me, they disappear faster than you think!
Storage: They keep in the fridge for a day, but are perfect cooked and eaten fresh. Just reheat in a pan to make them crispy again.
Notes: You can add mint or grated Parmesan for an extra touch. Watch out for allergies: contains gluten and eggs.
Service: I recommend serving them hot with a glass of cold sparkling white wine. They’re also perfect as finger food!

Yes, but they won’t be as crispy as fried. Bake at 392°F for about 20 minutes, turning halfway through.
Can I substitute sparkling water?
Better not because sparkling water makes the fritters soft and airy.
