Ingredients

  • 2 fennels (washed and cleaned from hard parts)
  • 2 eggs
  • 7 oz stale bread (toasted, crackers, or ready breadcrumbs)
  • to taste parsley
  • 1 clove garlic
  • to taste salt
  • 1 1/2 cups all-purpose flour

Steps

  • Preparing the Fennels
    Clean the fennels by removing the tougher outer leaves, wash and cut into slices about a quarter inch thick.
    Blanch the fennel slices in salted boiling water for about 5 minutes, until they are soft but still firm. Drain and let them cool slightly.

  • Prepare four plates: one with milk (or plant-based beverage), one with flour, one with beaten eggs with salt and pepper, and one with breadcrumbs ( for a more aromatic version see the recipe here for HERBED BREADCRUMBS ) mixed with parmesan and spices.
    Dip each fennel slice first in milk, then in flour, then in beaten egg, and finally in breadcrumbs, pressing well to adhere the coating.

    How to prepare Fennel Cutlets in Air Fryer
  • Preheat the air fryer to 356°F for 5 minutes.
    Place the coated slices in the fryer basket without overlapping them.
    Lightly spray with extra virgin olive oil for perfect crispiness.
    Cook at 356°F for 12-15 minutes, turning halfway through cooking.
    Remove and serve hot!
