Ingredients

  • 9 oz sweetened condensed milk
  • 1 cup heavy whipping cream
  • 3 egg yolks
  • 2/3 cup sugar
  • 1/2 cup pine nuts

Steps

  • Preparation of the mixture: Place all the ingredients except the pine nuts in the bowl.
    Cook for 5 minutes at 176°F, speed 4.
    Cooling: Let the mixture cool slightly and transfer to an airtight container. Place in the freezer for at least 3 hours.
    Chopping and churning: Once the ice cream has solidified, cut into pieces and return to the bowl. Chop for 20 seconds at speed 7, then at speed 10.
    Adding the pine nuts: Stir in the pine nuts with a spatula and serve in individual bowls.

  • Preparation of the mixture: In a large bowl, beat the egg yolks with the sugar until light and frothy.
    Adding the milk and cream: Add the condensed milk (or milk) and the heavy cream, stirring gently.
    Cooking: Transfer the mixture to a saucepan and cook over low heat, stirring continuously, until it thickens (about 10 minutes).
    Let cool.
    Cooling: Transfer the mixture to an airtight container and place in the freezer for at least 3 hours, stirring every hour to break up the ice crystals.
    Adding the pine nuts: Once ready, mix the ice cream with the pine nuts and serve in individual bowls.
