Ingredients

To prepare the orange risotto you need a few simple ingredients.
The secret is to use an untreated orange and a good risotto rice, so the result will be creamy and fragrant without being complicated.

  • 1.76 oz onion
  • 2 tbsp olive oil
  • 1.3 cups Carnaroli rice
  • 1.8 oz white wine
  • 3 cups meat broth
  • 3.5 oz orange juice
  • 1/2 teaspoon salt
  • 3.5 oz robiola cheese
  • 1 orange zest
  • 5 rosemary (needles)

Let’s start with the main ingredients:
Carnaroli Rice: 250 g (raw)
Absorbed broth: about 500–600 g
Orange juice: 100 g
Robiola: 100 g
Onion + oil + aromas: approximately 80–100 g
👉 Total weight of the cooked risotto:
approximately 1,050 – 1,150 g
We can safely round to:
✅ approximately 1.1 kg of cooked risotto

With a few everyday tools, you will be able to prepare the orange risotto without difficulty.

Steps

The preparation of orange risotto is very simple and follows the classic steps of risotto.
Just add the broth little by little and stir frequently to achieve a creamy and enveloping consistency.

  • Grate the orange zest and squeeze the juice, then set everything aside.
    Finely chop the onion and let it soften in a pot with the oil for about 3 minutes.
    Add the rice and toast it for another 3 minutes, stirring.
    Deglaze with the white wine and let it evaporate for 1 minute.
    Add the orange juice, a ladle of broth, a pinch of salt, the grated zest, and the chopped rosemary.
    Cook by adding the broth a little at a time, stirring often.
    At the end of cooking, add the robiola cheese and mix well until you obtain a creamy risotto.

  • Put the orange zest and rosemary into the bowl: chop for 10 sec. at speed 9, then another 10 sec. at speed 7. Set aside.
    Put the chopped onion in the bowl and chop 5 sec. at speed 5.
    Add the rice and toast 3 min. at 250°F speed soft reverse.
    Deglaze with the wine: 1 min. at 250°F speed 1 reverse, without measuring cup.
    Add the orange juice, broth, salt, and chopped zest and rosemary.
    Cook for the time indicated on the rice package: 212°F speed 1 reverse.
    At the end of cooking add the robiola cheese and cook for another 1 min. at 212°F speed 1 reverse.
