Ingredients

  • 4 zucchini (medium)
  • 10.5 oz ground beef (or mixed)
  • 1 onion (finely chopped)
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese (fresh)
  • 1 egg
  • 1 bunch chopped parsley

Steps

  • Preparing the Zucchini: Preheat the oven to 356°F.
    Wash the zucchini and cut off the ends. Using a teaspoon or a corer, gently hollow out the zucchini to create a cavity for the filling. Set the pulp aside.

  • Preparing the Filling: In the Bimby, place the onion, garlic, and reserved zucchini pulp.
    Chop for 5 seconds at speed 5.
    Gather the ingredients at the bottom of the bowl with a spatula and add the olive oil, cooking for 3 minutes at 212°F speed 1.
    Then add the ground meat, egg, cheese, and chopped parsley.
    Mix for 10 seconds at speed 5 to blend the ingredients well.

  • Filling the Zucchini:

    Fill the hollowed-out zucchini with the meat mixture, pressing slightly to compact the filling.
    Arrange the stuffed zucchini in a lightly greased baking dish.
    Sprinkle with a little grated cheese and a drizzle of olive oil.

  • Baking:

    Bake the stuffed zucchini for about 30-35 minutes, or until the zucchini are tender and the filling is well cooked.


    Serving: Remove the zucchini from the oven and let them rest for a few minutes before serving.
    Serve with a fresh mixed salad or some crusty bread.
