Ingredients for the Savory Pie with Turnip Greens and Sausage: How often do we discover at the last minute that something has been left out of the fridge? It happened to me with two rolls of puff pastry. So, to not waste them, I improvised a fridge-clearing savory pie… and the result was so good that I had to share it with you! We ate it for dinner, but it is also perfect for picnics, buffets, quick lunches, or rustic appetizers.

A fridge-clearing savory pie can become a masterpiece if we choose simple but flavorful ingredients: turnip greens sautéed in a pan, browned sausage, and a golden puff pastry crust… a real treat! 😋

  • 2 rolls of puff pastry
  • 10.58 oz turnip greens (or frozen friggitelli)
  • 1 clove garlic
  • 2 tbsp extra virgin olive oil
  • to taste salt
  • 2 tbsp Parmesan cheese (in granules or grated)
  • 1 egg yolk
  • 1 tbsp milk

Steps

This savory pie is perfect for busy days but also for when we want to indulge in something tasty. The turnip greens give a slightly bitter touch that balances the richness of the sausage. You can serve it hot or at room temperature, cut into wedges or cubes: it will always look great!

  • 1. Prepare the turnip greens: In a non-stick pan, heat the oil with a garlic clove. Add the frozen turnip greens and sauté them for about 10 minutes until well cooked. Lightly salt.
    2. Cook the sausage: In another pan, remove the casing from the sausage and brown it without adding any fat until it is golden and cooked. Drain excess fat if necessary.
    3. Combine the two ingredients: Mix the turnip greens and sausage in a bowl. Add grated Parmesan cheese and mix well.

  • 4. Assemble the savory pie: Place the first roll of puff pastry with parchment paper in a tart pan, allowing the edges to overhang.
    5. Filling and covering: Pour the filling into the pan, distributing it evenly. Cover with the second roll of puff pastry, sealing the edges by rolling them inwards.
    6. Decoration and baking: Prick the surface with a fork. Brush with the egg yolk beaten with a little milk.
    7. In the oven: Bake in a preheated static oven at 356°F (180°C) for about 40 minutes, middle rack, until the surface is golden brown.

Storage: In the fridge for 2-3 days in an airtight container or wrapped in plastic wrap. It is also great at room temperature the next day.
