Ingredients
- 2 cups all-purpose flour
- 2 cups Manitoba flour
- 1 teaspoon granulated sugar
- 0.5 oz fresh yeast (or 0.18 oz of dry yeast)
- 2 eggs
- 2/3 cup milk (warm)
- 3.5 oz butter (soft)
- 0.35 oz salt
- 5.3 oz cold cuts (mixed)
- 5.3 oz provola cheese (provolone, scamorza)
- 1 egg yolk
- sesame seeds
Steps
In a large bowl, combine the flours and sugar.
Add the yeast dissolved in the milk and start kneading while also adding the eggs and the slightly beaten eggs.
Continue kneading and gradually add the salt and butter.
Work until you get a soft dough ball.
If you want to speed up the steps, you can use a stand mixer.
Once the dough ball is formed, let it rise in a bowl covered with a cloth until it doubles in size.
It will take about two hours.Meanwhile, if needed, cut the chosen cold cuts and cheeses into small pieces.
Deflate the dough, form a rectangle, place the prepared filling in the center, close it up, and knead until the filling ingredients are incorporated.
Form a soft dough ball and divide it into two elongated dough balls, one of which is divided into two more parts.Take a 750 g dove mold, place the elongated dough ball in the center, and the two smaller dough balls on the sides to form the wings.
Let rise until it doubles in size, brush with a beaten egg white, and sprinkle with sesame seeds.
Bake at 350°F for 40 minutes or until golden.
Once ready, let your Savory Rustic Dove cool slightly and serve in slices.
