Sicilian Rice Fritters: Today I present to you some very tasty fritters for those who love rice in desserts. Rich and fragrant, they are the dough of Catania-style crepes in a simplified form and enriched with dark chocolate chips.
A treat with a tasty crust and a soft, delicious filling.

Ingredients

  • 1 1/2 cups rice
  • 1 2/3 cups all-purpose flour
  • 1 quart milk
  • 7 tbsps water
  • 1/3 cup sugar
  • 0.7 oz fresh yeast
  • 1 lemon (zest)
  • 1 orange (grated)
  • 1 to taste cinnamon
  • 1 quart peanut oil (for frying)
  • 1 pinch salt
  • 2 oz dark chocolate (chilled in fridge)

Steps

  • Recipe and procedure to prepare these delicious fritters perfect for snack time or special occasions

  • Pour the rice and milk into a saucepan with a pinch of salt and cook, stirring often with a wooden spoon to prevent sticking, until the rice has absorbed all the milk and has a soft and creamy consistency.
    When the rice is ready, let it cool slightly, then add the flour, sugar, orange zest, cinnamon, lemon, chocolate chips, and yeast dissolved in 7 tablespoons of warm water.
    Mix everything well until you get a mixture with a porridge-like consistency and let it rest under a clean cloth for 2 hours.
    Until it doubles in volume.

  • Heat oil for frying in a small pot and bring to 340°F, and fry one tablespoon at a time until golden.
    Drain excess oil and dry on paper towels. Serve sprinkled with honey softened in a water bath or rolled in granulated sugar and cinnamon as I did.
