To make this soft and aromatic cake, you need very few simple ingredients: you probably already have most at home! The special ingredient is mint syrup, which gives the cake flavor and color naturally.

- 1 3/4 cups all-purpose flour
- 1/3 cup potato starch
- 1 jar plain yogurt
- 1/3 cup sunflower oil
- 7/8 cup mint syrup
- g baking powder (for cakes)

Steps
Procedure to Prepare the Mint Cake: discover how to prepare this dessert even for those who are beginners, both with or without the Thermomix. To get a soft, perfectly moist, and irresistible cake.
1. Pour the sugar and the eggs into the bowl. Whip them for 3 min / speed 4.
2. Add the flour, potato starch, yogurt, sunflower oil, mint syrup, and finally the baking powder.
3. Mix for 30 sec / speed 4 (use the spatula if needed).
4. Pour all the batter into a 9.45-inch (24 cm) mold, buttered and floured or lined with parchment paper.
5. Bake in a preheated static oven at 356°F (180°C) for 40 minutes.
At least after 20/25 minutes of baking, always do the toothpick test!1. In a bowl, whip the eggs with the sugar until you get a light and frothy mixture.
2. Add the yogurt and oil, mixing well from the bottom to the top.
3. Pour the mint syrup and continue mixing.
4. Sift the flour, potato starch, and baking powder and gradually add them to the mixture.
5. Pour into a 9.45-inch (24 cm) mold, buttered and floured.
5. Bake at 356°F (180°C) for 40 minutes. Let it cool before removing from the mold.

How do I know when the Cake is done?
Just do the toothpick test at least 25 minutes after it has been in the oven, otherwise it deflates. If it comes out dry, it’s done; otherwise, leave it for another 5 – 10 minutes and do the toothpick test again.
