Ingredients

Perfect for autumn, especially in the months of October and November, when pumpkin is in season.

  • 1 3/4 cups all-purpose flour
  • 1/3 cup potato starch
  • 3/4 cup sugar
  • 1/2 cup butter
  • 4 eggs
  • 1 tbsp baking powder (for desserts)
  • 1 tsp vanilla extract
  • 1 pinch salt
  • as needed ground cinnamon
  • 1 cup pumpkin (raw and diced)
  • 1/4 cup sugar (also brown sugar)
  • 1 tsp ground cinnamon

Steps

We will bake the donuts in a static oven at 356°F, using donut or muffin molds.

  • 1. Preparation of the pumpkin: Clean and dice the pumpkin, then chop it with a mixer until you get a smooth puree.
    2. Whipping the ingredients: In a bowl, whip the eggs with 3/4 cup of sugar, a pinch of salt, and 1 teaspoon of cinnamon until you get a light and frothy mixture.
    3. Combining the ingredients: In another bowl, sift and combine the flour, potato starch, and baking powder. Add the pumpkin puree to the egg and sugar mixture, stirring gently. Finally, incorporate the sifted dry ingredients and melted butter (or oil), continuing to mix until you get a homogeneous batter.

  • 4. Baking: Pour the batter into the greased and floured molds, filling them ¾ full. Bake in a preheated oven at 356°F for about 15 minutes. Use a toothpick to check for doneness.

  • 5. Finishing: After taking the donuts out of the oven and letting them cool slightly, roll them in the sugar and cinnamon prepared previously, thus obtaining a sweet and spiced crust.
