Ingredients for a Soft Orange Cake
- 1/4 cup all-purpose flour
- 1 1/2 tbsps cornstarch
- 4 eggs
- 1 pinch salt
- 1/4 cup sugar
- 2 tbsps vegetable oil
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 orange (about 7 oz)
Steps
Preheat the oven to 340°F and line a 8-inch cake pan with parchment paper.
Wash the orange thoroughly, then dry it. Cut into pieces and remove any seeds.
Place the orange pieces in a blender and blend until smooth. Set aside.In a large bowl, break the eggs with the pinch of salt and sugar. Beat the eggs with a whisk until you get a homogeneous and frothy mixture.
Add the vanilla extract, sunflower oil, and orange puree to the mixture and gently mix until all ingredients are incorporated.
Finally, gradually add the sifted flour, cornstarch, and baking powder to the egg mixture, gently folding with a spatula until you get a smooth, lump-free batter.
Pour the batter into the prepared pan and level the surface with a spatula.
