- 3/4 cup whipping cream
- 1 tbsp powdered sugar
- 1 tbsp honey
- 30 cookies (Pan di Stelle)
- 5.3 oz dark chocolate chips
Steps
Procedure (Thermomix):
For the internal ice cream: Insert the butterfly whisk into the Thermomix bowl and add the fresh cream, powdered sugar, and honey.
Check the sweetness level and adjust if necessary. Set the Thermomix to speed 4 and whip everything for 1 minute, until you get a thick, whipped cream.
Add the dark chocolate chips and gently mix with a spatula, from bottom to top, to blend well.Assembly of Star Cookie Ice Cream Sandwiches: Arrange the Pan di Stelle cookies on the work surface and distribute the cream on top of half of the cookies using a pastry bag.
Close the cookies with the other half, roll the cream in the chocolate chips, and place everything on a tray. Put the Pan di Stelle in the freezer for at least 2 hours, or until they are well solidified, wrapped in plastic wrap.Whip the cream with an electric mixer, gradually adding the powdered sugar and honey until you get a thick consistency. Add the chocolate chips and gently mix with a spatula. Continue with the same steps indicated for the Thermomix previously.
