Today we will prepare a super soft version of these fried donuts, with or without the help of the Bimby. A special dough thanks to the addition of potatoes, for a result that melts in your mouth. Ingredients

  • 10.5 oz potatoes (boiled)
  • 2 cups all-purpose flour
  • 2 cups Manitoba flour
  • 2 eggs
  • 3 oz butter (soft)
  • 0.9 oz fresh yeast
  • 1.8 oz milk (warm)
  • 1.8 oz sugar
  • lemon zest (grated)
  • 33.8 fl oz peanut oil
  • to taste sugar

Steps

With the Bimby, we boil the potatoes, knead all the ingredients until we get a soft texture, let rise, shape the donuts, and fry them until golden. Finally, we roll them in sugar to complete.

  • With the Bimby:
    Cook the potatoes:
    Peel and cube the potatoes.
    Place 17.6 oz of water in the bowl, position the Varoma with the potatoes, and cook for 20 minutes, Varoma temperature, speed 1.
    Once cooked, mash and let cool.
    Prepare the dough:
    In the clean bowl, grate the lemon zest with the sugar for 10 seconds at speed 10. Set aside.
    Add the milk and yeast to the bowl, dissolve for 1 minute, 98°F, speed 2.
    Add the lemon-flavored sugar, soft butter, mashed potatoes, flours, and eggs. Knead for 3 minutes in Dough mode. If necessary, turn the dough and continue kneading until it is well combined and smooth.
    Transfer the dough to a bowl, cover with plastic wrap and let rise in a warm place for about 2 hours, until doubled in volume.

  • Cook the potatoes:
    Boil the potatoes in plenty of salted water, peel, mash, and let cool.
    Prepare the dough:
    Dissolve the yeast in the warm milk.
    In a large bowl, mix the sugar with the grated lemon zest.
    Add the dissolved yeast, soft butter, potatoes, flours, and eggs. Knead vigorously until you obtain a smooth and elastic dough.
    Cover with plastic wrap and let rise in a warm place for about 2 hours.

  • Divide the dough into balls of 2 oz each.
    Shape donuts by stretching each ball and making a hole in the center.
    Place them on trays lined with parchment paper, cover with a cloth, and let rise for another hour.
    Heat the oil to 338°F and fry a few graffe at a time, turning them until they are golden.
    Drain on paper towels and immediately roll in granulated sugar.

  • Preheat the oven to 392°F.
    Bake the graffe on a baking sheet lined with parchment paper for about 20 minutes. Use a toothpick test to check for doneness.
