A pot, three ingredients, and a bit of patience: that’s all you need. Honestly? Easier than this is only ordering a pizza.
- 1.76 lbs veal (knuckle or topside of veal)
- 1 yellow onion (large)
- 3 tbsps extra virgin olive oil
- to taste salt
- 1 to taste pepper
- 1 glass white wine
- 1 cup water (or meat broth, about 200 ml)
- aromatics for roast (bay leaf, sage, rosemary)

1. In a large pot, heat the oil with the coarsely chopped onion. Let it wilt over low heat.
2. Add the veal piece, salt and pepper it, and brown well on all sides until golden.
Deglaze with white wine and let the alcohol evaporate.3. Add the hot water, cover with a lid and let simmer on low heat for about 1 hour and 30 minutes, turning occasionally. If you have a thermometer, the center should reach a temperature of 149°F which is not raw but not overcooked; I find it perfect as you see in the photo. If needed, add more hot water or broth during cooking.
4. At the end of cooking, the sauce will have thickened, and the meat will be very tender. Wrap in plastic wrap and let it rest until it has cooled.5. If necessary, you can also let it rest for a day so it’s more tender.
Slice as thinly as possible and serve with the sauce that came of it. Enjoy your meal!!
