Ingredients
- 1 large eggplant
- 3 slices of cooked ham
- 3 slices of smoked scamorza cheese
- 2 eggs
- 1/4 cup of extra virgin olive oil
- to taste of salt
- to taste of flour
- to taste of breadcrumbs

Steps
Wash and cut the top and the first slice of the eggplant.
Cut into slices with a thickness of about 0.4 inches.
Sprinkle the slices with salt and let them rest in a bowl for about half an hour to remove the water.
After the time has passed, squeeze the slices and dry them with kitchen paper.
Prepare the pairs of slices, adding cooked ham and a slice of smoked scamorza cheese.
Dip the eggplant cutlets in flour, then in beaten eggs with a pinch of salt, and finally in breadcrumbs.
Place the cutlets in the air fryer basket and pour two tablespoons of extra virgin olive oil on top, cook at 356°F for 15 minutes.
Halfway through the time, open, flip the cutlets, and pour the other two tablespoons of oil to complete the cooking.
