Apple Pancakes

The apple pancakes are perfect for breakfast to be filled with yogurt, fresh fruit, or jam—your choice!

They are prepared in a few minutes, so you can wake up early to serve them hot or prepare them the night before and keep them in the fridge.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup coconut milk
  • 1/4 cup erythritol
  • 1 apple (about 7 oz)
  • 1 egg
  • 2 teaspoons baking powder
  • to taste ground cinnamon
  • Pan

Steps

  • Take a nice apple, peel it, and grate it.

  • In a bowl, pour the erythritol and egg, and work with a hand whisk.
    Pour in the coconut milk and grated apple.
    If you don’t have erythritol, you can use brown sugar or granulated sugar, and the same goes for the coconut milk, which you can substitute with lactose-free milk.
    Mix everything together.

  • Start incorporating the flour mixed with the baking powder a little at a time, finishing with a pinch of cinnamon.
    Your batter is ready to make the pancakes.

  • Heat the pan (diameter of 4.7 inches) over low heat and pour 2-3 tablespoons of batter.
    Cook slowly, and when bubbles start to form, flip over and cook on the other side.
