Ingredients

  • 2 1/4 cups 00 flour
  • 2/3 cup erythritol (granulated sweetener)
  • 1/3 cup sunflower oil
  • 1/2 cup orange juice
  • 2 eggs
  • 2 red apples
  • 1/2 cup walnuts (chopped)
  • 1 tbsp chia seeds
  • 2 tsp baking powder
  • to taste ground cinnamon

Steps

  • Prepare what you need: orange juice and walnut kernels chopped into small pieces.
    Cut one apple into small cubes and the other into thin slices.

  • Squeeze half a lemon over the apple cubes.
    Pour the orange juice over the apple slices and add a tablespoon of sugar, then mix.

  • Sift the flour with the baking powder and add the chia seeds and a dusting of cinnamon.

  • In a bowl, put the sweetener and the eggs; beat with the whisks until pale and frothy.

  • Add the sunflower oil, the orange juice in which the apple slices have been marinating, and the flour a little at a time while continuing to beat with the whisks.

  • After adding all the flour, finish by folding in the apple cubes and the walnuts; mix thoroughly.

  • Pour the batter into a buttered and floured loaf pan, arrange the apple slices on top.
    Bake at 356°F in a preheated oven for about 40 minutes.
    Before removing, perform the toothpick test to check that it is completely cooked.
