Barley and Spelt Soup with Mixed Legumes

In my recipe, you will prepare the dish in a short time. I used pre-cooked mixed legumes and grains for a quicker cooking, soaking them for a few hours. If you want to reduce the time even more, you can also use pre-cooked grains.

Ingredients

  • 0.88 oz of pearl barley
  • 0.88 oz of pearl spelt
  • 4.23 oz of pre-cooked mixed legumes
  • 1 small carrot
  • 1 piece of white onion
  • 2 tablespoons of extra virgin olive oil
  • 1 leaf of bay leaf
  • to taste of salt

Steps

  • Clean and cut the onion and carrot into small pieces.

  • Place a pan on the stove with two tablespoons of extra virgin olive oil.

  • Add the chopped vegetables and let them soften gently.

  • Add the pre-cooked legumes with a bit of hot water.

  • Season with salt, add the bay leaf, and let everything infuse for 5 minutes.

  • Cook the grains and then season with the mixed legumes. Serve hot.
